2 cups watermelon, cubed
1 cup strawberries, quartered
1 cup tomatoes, cubed
¼ cup Feta cheese
4 cups baby spinach or spring mix
¼ cup olive oil
½ cup rice wine vinegar
½ cup strawberry preserves
Place greens and fruit into a cold salad bowl. Sprinkle Feta over greens and fruit.
Blend oil, vinegar, and preserves with a wire whisk to make salad dressing.
Pour dressing over greens and fruit. Toss lightly. Serve immediately .
