Des Allemands Fried Catfish

Whip up a new dish for your family with the Herald-Guide’s Recipe of the Week.

Ingredients:

  • Catfish fillets
  • salt
  • Louisiana hot sauce
  • corn flour, seasoned
  • plain flour
  • hot oil

Directions:
Salt filets and sprinkle generously with hot sauce. Combine corn flour and plain flour, seasoned to taste. Dredge fillets in the flour mixture. Cook in real hot fat. The fish will curl quickly if the oil is hot. Take it out as soon as it is done. You can sprinkle lemon on top and serve it with ketchup or tartar sauce.
