Paul Terrebonne, a Nicholls State University culinary senior from Larose, practices for the San Pellegrino Almost Famous Chef Competition national title. Terrebonne won top honors at the regional competition in San Antonio, Texas, in January.
It was the fifth consecutive regional title for the John Folse Culinary Institute. Terrebonne’s winning dish included pan roasted red snapper with corn maque choux puree; Jazzmen Rice prepared with Abita Beer; and a confetti of pickled vegetables. He will take his winning recipes to Napa Valley, Calif., in March to compete against nine additional regional winners from the United States and Canada.
