PJ’s Coffee shop in Luling eyes November opening

The new PJ’s Coffee will be located on the corner of Highway 90 and Mimosa Avenue.

Originally slated to open in early 2021, the owners of Luling’s PJ’s Coffee shop are now saying that their store should be ready to serve customers by late November.

The shop will be located on the corner of Highway 90 and Mimosa Avenue.

“I’m trying to be cautious when providing updates, because this ‘new normal’ post-Covid world is so crazy,” Andrew Jones, who along with business associates Teddy Amar and Mateusz Dabrowski owns the franchise, said. “We had a change of contractors and had to go back to the drawing board and re-bid the project back out. In May we went back under contract.”

The owners were hoping to be open in early October, but Hurricane Ida further delayed construction.

“We’re going to make this last push … we’re so ready,” Jones said. “We’re definitely excited to get the store open. It’s been a long time coming. We’re now exceeding a year of development.”

The Luling store was first announced in October 2020. Jones said the coffee shop, however, will be worth the wait.

“PJ’s just rolled out a beignet program,” he said. “Not all of the PJ’s locations have it yet, but we’ll be opening with a beignet fryer and be serving them all day. We’re excited.”

The shop, Jones said, will have ample seating for patrons.

“We have a good blend of indoor and outdoor seating,” he said. “We have a little covered patio and tons of space. It will be a cream of the crop store for Pj’s … we’re trying a lot of new stuff out there. It’ll be cool for Luling.”

Jones said the coffee shop will employ up to 15 people when it opens, and he is excited to see the community already rally behind the new business. Hiring has begun.
