Local chef Wayne Shexnayder filmed for Canadian food network

Last month, local chef Wayne Schexnayder was filmed by the Canal Evasion Travel Channel in Quebec to be featured on a cooking show.

In the episode, Shexnayder is cutting pieces of his venison loaf, andouille sausage and andouille loaf for the travel channel star Philippe Molle to sample.

Molle’s French-speaking show is offered by the Telepunch Production Company and the show is titled Baskets of the World with Philippe Molle. It will be shown in Canada.

Philippe Molle has visited 15 of the “best food” cities of the world and New Orleans was the only one visited in the United States.

Some of the other cities included Hong Kong, Budapest, Mexico City, and Paris.

Danny Trace, a chef at Cafe Adelaide in New Orleans became a tour guide for the show in New Orleans along with Crescent City Farmer’s Market Assistant Director Micha Byruk who led the Canadians to Shexnayder’s Kenner plant.

Byruck had seen the exciting combinations of foods that Shexnayder was selling at the Market like Cote des Allemands ham, a unique item stuffed with andouille.

Shexnayder’s own Louisiana Hurricane Sauce, his delicious andouille sausage – that is shipped all over the country – and Schexnayder’s Acadian Seasonings are a few of his specialties.

The crew thought Chef Wayne’s products were like no other they had seen and Byruck knew the traveling food show would love to get to know Shexnayder.

The first thing the television entourage noticed when they visited Shexnayder’s Kenner plant was how clean it was.

The crew took a tour of the facility and televised it. Then they tasted some of Shexnayder’s smoked venison loaf and andouille loaf with help from his assistants Deirdre Faucheux and Joseph Murray.

The television entourage were sent home happy with samples of their own, one of which was an olive salad dressing.

Shexnayder says that he started making his own fresh olive salad dressing several years ago.

This dressing doesn’t have brine in it so it is kept refrigerated but according to Faucheux, Oprah’s food contributor Mimi Reed has chosen it as the best tasting olive salad she has found and plans to put her findings in the O Magazine after she sees how it’s made.

Most currently, Shexnayder says local artist Matt Touchard is working on designing a label for his new barbecue and dipping sauce which he plans will be out by summer.

Chef Wayne is originally from Hahnville and represented Louisiana in the Teen Age America contest in Boston in 1977.

He is a former body builder who met Arnold Schwarzenegger during his bodybuilding years.

You can pick up Shexnayder’s deliciously seasoned smoked chickens and brisket and pork at our local farmer’s market plus the other delicacies every Wednesday and Saturday.
