When Pauline Matheny of Norco decided to open her own business, she knew she wanted to align herself with a brand that values integrity, consistency and community impact.
“Jersey Mike’s checked every box,” Matheny said.
Matheny said the new Jersey Mike’s on Highway 90 near El Paso Mexican Grill will open in early March. Jersey Mike’s sells a variety of hot and cold sandwiches made with sliced meats and cheeses. Signature menu items include the Original Italian and Mike’s Famous Philly Cheesesteak.
Matheny has over 10 years of experience as the district manager for Dunkin’ Donuts and she worked as a general manager for two Jersey Mike’s locations in Tennessee before her and her husband, Jerry, and three teenage children settled in St. Charles Parish.
“Having worked inside the brand, I saw firsthand how much support franchisees receive and how strongly the company believes in giving back,” Matheny said. “What inspired me most was Jersey Mike’s commitment to people – both employees and customers.”

Matheny said it was important for her that the restaurant be accessible and that it becomes a neighborhood staple.
“We chose this location because Luling is a growing, tight-knit community, and we wanted to be in a spot that’s convenient for local families, workers and visitors,” she said.
At Jersey Mike’s, residents can expect high-quality ingredients and exceptional customer service, Matheny said.
“Jersey Mike’s is known for doing things the right way – subs made to order, friendly faces behind the counter, and a welcoming atmosphere where everyone feels valued,” she said.
Matheny said she is looking forward to building a strong local team and becoming part of the Luling community.
“Watching our crew grow, serving our neighbors, and supporting local causes is what excites me the most,” she said.
